White Chocolate Covered Strawberries
Fresh strawberries and white chocolate are a match made in heaven.
While these Ghirardelli White Vanilla Flavored Melting Wafers aren't technically real chocolate, they're absolutely delicious (and foolproof) so I'm staying loyal and loving them for who they are.
When it comes to that perfect bite, the quality of your strawberries, quality of your chocolate, and the preparation of both will make all the difference. So let's get into it!
Ingredients:
Strawberries
Chocolate: Ghirardelli White Vanilla Flavored Melting Wafers
Sprinkles
Parchment Paper
Step 1: Strawberry Prep
Strawberries should be dry and at room temperature before dipping.
To clean, gently wipe them with a paper towel or rinse them and leave out for a few hours to dry. This prevents 'sweating', or excess liquid from seeping out once the chocolate sets.
Step 2: Assembly Prep
On a clean counter top, lay out a large sheet of parchment paper and set your sprinkles aside. Your strawberries should be out and ready as well.
Step 3: Chocolate Prep
When it comes to melting your wafers, you have options:
Microwave: Microwave them in a medium size microwave safe bowl. Cook them 20 seconds at a time, stirring between, until completely melted.
Sauce Pan: Melt them on the stove in a medium size sauce pan, over medium heat. As soon as they start to melt, take them off of the heat and stir- return to heat if needed, but not for long. Your pan will hold heat so make sure you're not overcooking.
Double-boiler: Fill the bottom of a medium size sauce pan with 1-2 inches of water and bring to a simmer. Place a bowl on top and add your wafers. The steam from the water will melt your chocolate, just make sure you're not overcooking!
The goal with your melted chocolate is to have a smooth, thin consistency! You want a thin chocolate coating on your strawberries for that perfect bite (and to prevent excess chocolate from pooling around them as they set!).
Step 4: Assembly
Time to dip! Pick your strawberries up by the stem, then dunk and twirl in your chocolate until they're fully coated. Allow any excess chocolate to drip off before placing on your parchment paper. Sprinkle immediately as they only take a few minutes to set!
Step 5: Enjoy!
With my crew- if we're lucky, we'll wait 20 minutes or so to taste test. Follow your heart here!
Keep in mind that they're best fresh (they'll keep well on the counter for several hours) but can also be refrigerated overnight! To store them in the refrigerator, place a layer of parchment paper under and over them before wrapping with plastic wrap.
